  • 1 pound elbow macaroni

  • 4 tablespoons unsalted butter

  • 4 tablespoons all-purpose flour

  • 4 cups whole milk

  • 2 teaspoons Dijon mustard

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon paprika

  • 1/4 teaspoon cayenne pepper (optional)

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 4 cups shredded cheddar cheese.

  1. Preheat your oven to 375°F.

  2. Cook the elbow macaroni according to package instructions in a large pot of salted water, until al dente. Drain and set aside.

  3. In the same pot, melt the butter over medium heat.

  4. Whisk in the flour and cook for about 1 minute, until the mixture is smooth and bubbly.

  5. Slowly whisk in the milk, making sure there are no lumps. Add the Dijon mustard, garlic powder, paprika, cayenne pepper (if using), salt, and black pepper.

  6. Cook the sauce, whisking constantly, until it thickens and coats the back of a spoon, about 5-7 minutes.

  7. Remove the pot from the heat and stir in the shredded cheddar cheese until it's melted and the sauce is smooth.

  8. Add the cooked macaroni to the pot and stir until it's evenly coated with the cheese sauce.

  9. Transfer the mac and cheese to a greased 9x13-inch baking dish and bake for 20-25 minutes, until the top is golden brown and bubbly.

  10. Let the mac and cheese cool for a few minutes before serving.
